Caramel Popcorn

Caramel Popcorn is good anytime of the year, but as the weather starts to turn to fall caramel popcorn is a must in our family. My husband is the king of popcorn and has a reputation for making the best kettle corn and caramel corn. With much persuasion he decided to share his recipe. So here is the best caramel corn and it’s not that hard to make. If you don’t want to make your own popcorn, pre-made popcorn will also work, but its better with fresh made popcorn. Jumbo Chocolate Chip Cookies

I found this recipe for Jumbo Chocolate Chip Cookies in the Family Circle magazine years ago. I made a few changes and it quickly became a family favorite. The are soft and gooey with loads of chocolate chips. They are so good you can’t eat just one. When my mother would visit she would always request these cookies. These are the only chocolate chip cookies my daughter will make. Try them and I don’t think you will be disappointed.

Preheat oven to 325 degrees

2 1/4 cups all-purpsoe flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter or margarine, at room temperature
2/3 cup smooth peanut butter
1 cup granulated sugar
1 cup packed light-brown sugar
2 eggs
2 teaspoons vanilla
1 bag (12 ounces) milk chocolate chips
1 1/4 cups coarsely chopped walnuts

Combine flour, baking soda and salt in bowl.
Beat together the butter, peanut butter, granulated sugar and brown sugar in a large bowl until light and fluffy, about 3 minutes. Beat in the eggs and vanilla until blended. Sit flour mixture until blended and dough forms. Stir in the chocolate chips and chopped walnuts.

Drop dough by tablespoon full onto a large, ungreased baking sheet. spacing the cookies about 2 inches apart.

Bake in 325 degree oven for 12 to 14 minutes, until golden brown around the edges and lightly colored on top. Do not over-bake.

Put the baking sheet on a wire rack and cool for 3 minutes. Remove the cookies with a metal spatula form the baking sheets to a wire track and cool completely.

Bet you can’t eat just one!

Broccoli Stir Fry

Broccoli Stir Fry, this is one you are going to want to try!

Broccoli Stir Fry is delicious, quick, healthy, and easy to make. I usually double or triple the sauce depending on how many vegetables are used. I use a mixture of vegetables depending on what I have on hand. The sauce should be prepared before you start cooking the broccoli. I serve it with brown rice or soba noodles.

Chocolate Scotcheroos

This recipe was adapted from the cookbook ‘More Than A Cookbook’.The author, Mary Carson, had a catering business for 35 years which was well know and popular in the Inland Northwest. She put her cookbook together as a fund-raiser for the UGM (Union Gospel Mission). The book is not only filled with delicious recipes, but also has many inspiring stories about some of the girls that have lived at the UGM and went through their Women’s Recovery Program.

These Chocolate Scotcheroos have quickly become a family favorite. They are so much better than regular rice crispy treats.

1 cup light corn syrup
1 cup sugar
1 cup peanut butter
6 cups rice crispy or cocoa crispy cereal
1 6oz package of semi-sweet chocolate morsels
1 cup butterscotch chips

Combine the corn syrup and sugar in a 3-quart saucepan, cook over medium heat, stirring frequently, until the sugar dissolves and the mixture begins to boil. Remove pan from heat and stir in peanut butter, mixing will. Add the cereal, stirring until well coated.

Spoon and press the mixture into a 13x9x2-inch pan that has been coated with cooking spray. Set pan aside.

Melt the chocolate and butterscotch chips together in a 1-quart saucepan over low heat, stirring constantly. Spread the melted chocolate evenly over the pressed cereal mixture, and allow the dish to cool until it becomes firm. When the dish has cooled, cut into 2 by 1-inch bars.

 

Manicotti

This is my favorite time of year, the weather is starting to change and the nights are getting cooler. Nature is starting to display her beauty! The vivid colors of the leaves are amazing and I’m in the mood for hot apple cider, carving pumpkins and snuggling up with a good book beside the fireplace. My family is starting to request their favorite comfort foods and first on the list is Manicotti. This has been a family favorite for years and has been served for many weeknight dinners as well as special occasions. Serve with a tossed green salad, garlic bread, a glass of hearty red wine, and you will be sure to please.
