Manicotti

This is my favorite time of year, the weather is starting to change and the nights are getting cooler. Nature is starting to display her beauty! The vivid colors of the leaves are amazing and I’m in the mood for hot apple cider, carving pumpkins and snuggling up with a good book beside the fireplace. My family is starting to request their favorite comfort foods and first on the list is Manicotti. This has been a family favorite for years and has been served for many weeknight dinners as well as special occasions. Serve with a tossed green salad, garlic bread, a glass of hearty red wine, and you will be sure to please.

All the ingredients

Boil the manicotti as directed on package

Manicotti

Brown the beef and garlic, drain fat and cool

Manicotti

Mix together cottage cheese, mozzarella, salt and mayonnaise

Add cooled ground beef to mixture

Manicotti

Put meat and cheese mixture into a large plastic bag and snip off the end

Fill each manicotti with mixture

Manicotti

Arrange in pan, cover with sauce, sprinkle with oregano and parmesan

Cover with foil and bake for 20 minutes,
remove foil and bake for and additional 10 minutes

1/2 pound ground beef
1 clove garlic
1 cup creamed cottage cheese
4 oz mozzarella cheese
1/2 tsp. salt
1/2 cup mayonnaise
8 manicotti, cooked and drained
1 jar spagetti sauce
1/2 tsp. dried oregano leaves
1/4 cup parmesan cheese

Brown beef and garlic, then drain fat
Mix next 4 ingredients in a bowl, stir in beef
Fill each manicotti with about 1/4 cup cheese meat filling
Place in baking dish, cover with sauce.
Sprinkle with oregano and cheese
Cover with foil and bake at 350° for 20 minutes
Remove foil and bake for 10 minutes longer
serves 4-6
